OVERVIEW

The modern bodega includes conical oak, cement and steel tanks for fermentation of the distinct parcels and according to the type of wine being produced. Barriques are of primarily French oak, from various producers. Extreme altitude and soil types combine with sensitive winemaking to express the deep minerality of the region, highlighted by freshness and balance.

HISTORY

The Díaz Bayo family are perennial growers in the village of Fuentelcésped, where viticulture dates to the 1100s and Reconquest of the Duero Valley. Ideal conditions for vines were found along the Arroyo de la Nava, a high valley just ten miles to the southeast of modern-day Aranda de Duero.

The estate comprises nearly 100 acres in multiple parcels between 2800 and 3200 feet in elevation, soil types encompassing limestone, marl and clay. Varied exposures further contribute to fruit diversity and extended harvest.The age of the vines, the great majority old-clone Tinta del País, ranges from 12 to 100 years, the average being well over 50 years. Viticulture is organic.

Díaz Bayo Crianza (2015) - "This pitch black colored Tempranillo from Diaz Bayo is a very good value. It opens with a faint black currant bouquet. On the palate, this wine is full bodied, balanced and pleasantly round in the mouth. The flavor profile is a rich black currant, black tea and oak blend. I also detected hints of minerality, black plum, black olive and a dash of black pepper. The finish is dry and its moderate tannins are nicely prolonged. This Tempranillo is food friendly and would pair well with a pot roast. Enjoy."

Díaz Bayo Reserva (2011) - "This dark maroon colored Tempranillo from Diaz Bayo opens with a black currant bouquet with a hint of prune and oak. On the palate, this wine is full bodied, slightly acidic, juicy and really coats your mouth. The flavor profile is an extracted black raspberry with notes of oak and black plum. I also detected hints of clove, raisin, black cherry, and black pepper. The finish is dry and its moderate tannins show nice length. This Tempranillo also benefits from some air, so I would decant it and pair it with crispy duck breast. Enjoy – Ken"
